چکیده

Knowledge concerning the enzymic systems of various pathogenic bacteria and their dependence on specific vitamins or accessory substances is still rather vague. The work of Davis (1917), Thj6tta and Avery (1921), and Fildes (1921) has demonstrated that Hemophilus influenzae requires two substances for its growth: x, a heat-stable substance, probably hematin, and v, a heat-labile substance. Kligler (1919) showed, in an extended study on the growth requirements of certain pathogenic bacteria (Corynebacterium diphtheriae, meningococcus, etc.), that minute quantities of tissue extractives, or extracts of nasal mucous secretion are either essential for growth or have a stimulating effect. More recently Knight (1937) has shown that nicotinic acid was essential for the growth of Staphylococcus aureus, and

Statistical Optimization of Arachidonic Acid Production by Mortierella alpina CBS 754.68 in Submerged Fermentation

Arachidonic acid is an essential fatty acid in human nutrition. In the present study, production of arachidonicacid by Mortierella alpina CBS 754.68 was evaluated in submerged fermentation. The fermentation variableswere selected in accordance with the Plackett-Burman (PB) design and further optimized via response surface methodology (RSM). Five significant variables, namely glucose...

Dominant Lactic Acid Bacteria in Naturally Fermented Milks from Messinese Goat’s Breed

Background: Lactic Acid Bacteria (LAB) are an important group of microorganisms responsible for the fermentation dairy products. This study was done to identify the dominant lactic acid bacteria in naturally fermented milks from Messinese goat’s breed. Methods: Eighteen individual raw milk samples collected from Messinese goat’s breed were acidified at pH 5.20 and left to spontaneously ferment...

Studies on bacterial utilization of uronic acids. II. Growth response and oxidative activity of various species.

The ability of members of the colon-typhoiddysentery group of bacteria to utilize glucuronic acid was established some years ago (Kay, 1926; Quick and Kahn, 1929). Subsequently, Heald (1952a) isolated a number of coliform bacteria from rumen contents which fermented glucuronic acid to products quite different from those produced by the fermentation of glucose. Kraght and Starr (1952) reported t...

Isolation, identification and characterization of thermo-tolerant acetic acid bacteria for semi-continuous acetous fermentation at high temperature

Nowadays, vinegar is industrially produced by mesophilic acetic acid bacteria (AAB). However, temperature fluctuation during acetous fermentation is inevitable, and may cause process disturbances. This can be mostly avoided using thermo-tolerant AAB. The main purpose of the present study was to isolate thermo-tolerant AAB. Fermentation performances were then evaluated. Twenty-eight different is...

Evaluation of Sensorial, Chemical, and Microbial Characteristics of Pickled Cucumber Supplied in Shiraz

Background: Cucumber is one of the vegetables that are widely preserved by fermentation in brine. Vegetables such as cucumber are normally not washed in the commercial centers and this causes microbial growth during fermentation. At the beginning of the fermentation process, lactic acid bacteria, depending on the environmental conditions, begin to grow. The aim of this study was to compare the ...
